The Tokyo series is a line of Japanese-inspired knives, suitable for the preparation of traditional oriental dishes, such as sushi, sashimi, ramen. The blade is made of steel with a high carbon content, with chromium-molybdenum-vanadium (X50CrMoV15), while the handle in Lifoflex allows an excellent grip.
YANAGIBA is a knife with a narrow and pointed blade, suitable for cutting and slicing most fish and preparing sushi and sashimi.
